Co-owners Kirsten and Brielle Fuchs<\/p><\/div>\n

Kirsten Fuchs has always loved the idea of opening a caf\u00e9 to serve gourmet nut butter, jam sandwiches, delicious baked goods and coffee. \u201cI grew up eating PB&Js, and they still bring back fond memories of my childhood,\u201d she says.<\/p>\n

The caf\u00e9 was also named after Fuchs\u2019 father, a voice and music theory professor, who recently passed away. \u201cHe was so proud of the caf\u00e9 and was able to see all of his music displayed there,\u201d she adds.<\/p>\n

Fuchs\u2019 other business, Baked Pie Company, delivers fresh and made-from-scratch baked goods to the caf\u00e9, which Fuchs says \u201cis just the icing on the cake, literally and figuratively.\u201d The staff is young and vibrant. Fuchs\u2019 daughter Brielle manages PB & Jay\u2019s and hopes to inherit the caf\u00e9 in the future.<\/p>\n
