Book Feature: Adirondack Appetite: 150 Recipes for Cabin, Camp & Beyond

Susi Gott Séguret, Author

Madison County’s Susi Gott Séguret—an author, speaker and culinary innovator—grew up camping in both the Smoky Mountains and the Adirondacks. “Since my first cookbook (Appalachian Appetite) honored the southern mountains, it made sense to honor the northern mountains with Adirondack Appetite,” she says. “All recipes, however, work just as well no matter where you find yourself.”
The book includes recipes that lend themselves well to a campsite (readily transportable ingredients and ease of preparation) and to cooking in a cabin where, Gott Séguret says, “recipes can be more ornamented, and can include slow-cook dishes like baked beans and boeuf bourguignon.”

Apart from a difference in climate, with the North having a shorter growing season, and some ingredients that are regionally distinct such as maple syrup there and sorghum syrup here, she says that otherwise the two mountain regions have much in common. “I hope people drink in the beauty of the woods, be they northern, southern, western or far eastern,” Gott Séguret says, “and realize that they can eat well no matter when or where, with just a little forethought and a little ingenuity.”
